We are thrilled to announce the official release of our much anticipated Wild Savagnin, Solero No.3!
Join us this February for our Savarro Saluto Masterclass which marks the first of our Masterclass series for 2024.
Make the most of this exclusive opportunity to taste our brand new wine, alongside Solero No. 1 & 2.
You will also get the opportunity to taste our 2023 Single Vineyard Savarro as well as a couple museum releases of our Savarro! We will be serving Comté Cheese alongside these wines.
While on the topic of Savagnin, we have added our imported Vin Jaune, a rare yellow wine made in the Jura region of France to the tasting. There will be a surprise wine in store for you as well as wine specials on the day!
The Savagnin grape has a complicated history, with studies suggesting this varietal was first recorded in the Tyrolean village of Tramin in the 10th Century.
Since then, this grape has become the ‘mother’ grape of many modern-day varietals such as Sauvignon Blanc, Chenin Blanc, Grüner Veltliner, just to name a few!
When creating our Solero System, we took inspiration from winemaking techniques of the first millennium. Our focus is on minimal intervention in the vineyard by the means of hand-picking and foot stomping the grapes. In the winery we have invested in 400L clay eggs in which we ferment our Wild Savagnin with wild yeast and then age by layering vintage over vintage.
Why not make a day of it and join us for lunch in Ai Fiori Trattoria! Let us know if you are wanting lunch when booking your masterclass tickets so we can reserve a table for you!
A trip to the Yarra Valley is not complete without staying amongst the action, we still have a few rooms available in our Villette over that weekend! These will not stick around for long so snap them up while you can!
