As the light fades on a Friday in Healesville, the grill is lit at the Cellar Bar.

Over two Fridays in Cabernet season we’re opening a bottle that suits the night, our La Maison de Ong Cabernet X Syrah ‘Dark Moon’, to pour alongside Signature Steak Night.

Dark Moon is half Cabernet and half Syrah, fermented whole-cluster and extracted very gently. The cool 2023 vintage gave us ripe fruit at lower alcohol, with good acid and balance. In the glass it’s layers of gently spiced Yarra Valley dark fruit, bright and textural. It’s a wine about darkness, and about what comes out of it.

Put it next to charcoal. Choose the chargrilled O’Connor porterhouse with house-made Wine Merchant Butter and parmesan fries, or the pepper-crusted Black Onyx hanger steak with chimichurri. Smoke, char and fat bring out the spice and structure of the wine, and the wine lifts the steak.

Start with freshly shucked oysters, stay for dessert, and let the evening run long. The full à la carte menu is available too, with pescatarian and vegetarian options.
