Payne's Rise

Set within Seville’s original 1860s homestead, Paynes Rise is a rare chance to wander through the historic lath-and-plaster buildings crafted by Seville’s first settler, Thomas Payne. The heritage house, stables and outbuildings have been lovingly preserved — a genuine window into early pioneering life, complete with original Baltic pine floors, handmade bricks and period fireplaces.

The cellar door is integrated into this atmospheric setting, offering tastings of elegant, cool-climate wines grown on the estate’s north-facing volcanic soils (200m elevation). A seasonal à la carte lunch menu, gourmet platters and relaxed indoor/outdoor dining complete the experience.

Seville Estate

As the first winery established in the Upper Yarra (1972), Seville Estate is a pioneer of cool-climate winemaking in the region. The estate’s original plantings sit on deep red volcanic soils in a secluded, higher-elevation pocket — a bold choice in the 1970s that would come to define the Upper Yarra’s reputation for long, slow ripening and beautifully precise wines.

The cellar door is set within a serene native garden and offers a range of tasting experiences including estate classics, seasonal releases, and rare museum wines. Although the restaurant is currently on pause, the estate remains an exceptional stop for those wanting to understand the Upper Yarra’s terroir-driven style and rich winemaking heritage.

For those looking to extend their visit, Seville Estate’s Homestead and Vineyard Studios offer refined accommodation immersed in vineyard views.

Sir Paz Estate

Perched high in the Upper Yarra, Sir Paz Estate is a family-owned vineyard shaped by a rich Mediterranean heritage. Established in 1997, it represents the fulfillment of a long-held promise made by the Zapris family after emigrating from Greece — to once again craft wines on their own land.

The estate sits on a rare band of ancient red volcanic soil, giving its wines depth, structure and striking minerality. Visitors can enjoy guided tastings in the enclosed, heated terrace overlooking one of the most dramatic vistas in the entire Yarra Valley.

The woodfire restaurant brings theatrical flair: all dishes are cooked solely over woodfire — no gas, no fryers, no microwaves — creating a generous shared menu designed to pair seamlessly with estate-grown wines. With sweeping views, expressive cool-climate reds, and limited back-vintage releases available, Sir Paz offers a truly destination-style Upper Yarra experience.
